Chai Tea - is the name given to tea blended with spices. Coming from the word "Cha" which is Hindi for tea. We have been making massala chai tea for 20 years. The family recipe handed down to us by the very splendid Mr Manu Vyas of tooting. Traditionally every Indian Family would have it's own secret combination of spices to blend and brew up the family massala chai. Of course brewed up in a big saucepan with water ( pani ), spices, a little milk ( dude ) and some chini ( sugar ). Boiled for some time gently, and then served.

Chai Tea - What is the recipe ?
The spices used for chai tea are based upon a blend of several spices including: nutmeg, ginger, cardamom, pepper, etc... The spice must be fresh and blended with the tea and packed all in a flash. Traditionally the preferred tea of choice for such a brew is a Kenya based blend of teas.

We named our tea Bombay Tea, although it was tempting having grown up in Calcutta to call it "Calcutta Chai" but it did not quite ring.
